A must for Gluten-free kitchens

muffin.jpgOne of my must-have pantry staples is Gluten-Free Pantry's Muffin and Scone mix.

I've never had the urge to make scones, but this mix is a 3-in-1: you can make muffins, pancakes or waffles. Each only requires a few added ingredients, and the box lists substitutions that can be made for milk allergies.

The muffin recipe calls for eggs, but I've just left any kind of substitution out completely and have noticed no difference.

And the products taste yummy. My son, who has no allergies, loves them just as much as my daughter does. Of course, the milk-free chocolate chips I add probably help. I also throw in blueberries to make it a bit more healthy.

Another thing I like about not using eggs, the mix holds up in the fridge for about a week and doesn't separate and look all gloppy.

I generally have no problem finding the mix at Giant. You can order it online here and also find some yummy-looking gluten-free recipes.
