This morning, Christopher Kimball, editor of Cook's Illustrated magazine and host of America's Test Kitchen on PBS, offered tips for saving some Thanksgiving treats from the incompetence of the chef.
Here is a print version of his tips, but for a real treat, listen to the audio of him showing how to cook a turkey in less than an hour. The process involves a rubber mallet. The sound is pretty incredible. It sounds like the soundtrack to a horror flick.
