Mango Salsa a healthy Cinco de Mayo recipe

With Cinco de Mayo on the horizon, there’s a chance you might indulge in some Mexican favorites — tacos, burritos, margaritas and guacamole. Ever try to ignore the tortilla chips and salsa at a Mexican restaurant? It’s torture.

If you’re attending a gathering or partying solo, we’ve got a light, fruity side that will wow your palate: Mango Salsa. This versatile topping pairs wonderfully with fish — try tilapia — and can hold its own as an appetizer on party spreads.

Mango Salsa


2 cups mango, diced (1 to 2 mangoes)
1/3 cup red onion, diced
1/3 cup red bell pepper, diced
1/4 cup cilantro
1/2 lime
Salt and pepper to taste


1. Mix all ingredients in a bowl. Chill before serving.
