Another in the list of many events going on this unseasonably nice weekend: a sweet potato dig in Shrewsbury Township.
The yummy veggies are good for your health, said Jack Osman, one of the co-owners of the Wellness Farm, which is hosting the dig. One medium baked sweet potato supplies more than twice the recommended daily allowance for Vitamin A, more than a third of the RDA for Vitamin C and about 10 percent of the RDA for iron. Sweet potatoes are also one of the few non-fat sources of Vitamin E, he said.
And while you're there, take a chance and try some of the notable dishes. From a story in Tuesday's Weekly Record:
Osman said he loves to experiment with foods and enjoys finding new and unusual ways to use sweet potatoes, including his chocolate sweet potato pie that took honorable mention at the 2002 Juneteenth National Sweet Potato Pie Contest, and his vanilla sweet potato pie, the second place winner at the 9th Annual Sweet Potato Contest held at the 2003 Maryland State Fair.
“The chocolate sweet potato pie is awesome. People say 'I don't like sweet potatoes,' and I say 'try my pie.' The vanilla is just as good and the lemon is excellent,” Osman said.
