As promised, picnic food (part 1)

I promised a rundown on the picnic food from yesterday's church picnic. I don't have the photos uploaded yet (tomorrow, I swear!)

But, I did want to give an update on my husband's covered dish. I was really surprised when he offered to make one, but he did - AND he stuck with the current family food challenge, which is to hold off a trip to the grocery store as long as possible by making use of items "found" in the pantry, fridge and freezer.

So what did he make?

A jazzed-up red beans and rice hot dish based on a box of Zatarain's we had in the pantry. He added to it - some sun-dried tomatoes, for example - and it made for a neat change from the parade-o-potato-salads you normally see at covered-dish picnics around here!

P.S. - Is "covered dish" a Yorkism? I know what I mean, but it doesn't occur to me whether or not other people say this.

Check back tomorrow for pictures of the hubby's dish as well as some of the other treats.

The full "recipe" was: one layer of Zatarin red beans and rice; one layer of Goya black beans; and a top layer of Zatarin's dirty rice, with sun-dried tomatoes mixed in. Plus random sprinklings of various spices.
