Whether you call them red-beet eggs or pickled eggs, I think you can agree that they are indisputably purple eggs!

Jo, hope you enjoyed your lunch! Jo, by the way, is in the minority in our egg poll... she says these are definitely pickled eggs. Unfortunately, of the 27 votes cast, 70 percent opted to call them red-beet eggs instead. (And my father-in-law, who clearly does not know his York County eggs, called them deviled eggs. My goodness.)

I like red beet egg sandwiches. Sliced red beet egg on white bread with lettuce, tomato, and mayonaisse. (sometimes with bacon) yum! yum!
I also like them in a fresh salad.
I am a pickled beat eater. I am not from York but grew up in Md (close enough). I remember taking pickled beats in my lunch as an elementary school kid. Talk about getting made fun of! I didn't care. They were good!! I remember the day that I took Pickled beats and Kiwi fruit ( in separate baggies) in my lunch. I think several kids wanted to throw up. I have been a foodie for a LONG TIME!
I grow beets in my garden specifically for this recipe.
6-8 Red Beets - steamed ~ save the liquid
1 c. sugar
1½ t. all spice ~ whole
½ t. salt
1½ C. vinegar
1 c. Liquid from the steamed beats.
2 cinnamon sticks
1. Cut off the tops and peel the beets.
2. Combine the rest of the ingredients and bring to a boil.
3. Slice the beets and pour the liquid over the beets. Let rest in the refrigerator overnight.
Hard boiled eggs can be added too.

That's an awful lot of sugar put into a vegetable that has it's own natural sugar. This recipe is more like a Harvard Beet recipe which calls for a lot of sweetness. Too sweet for my tastes.
Why peel the beets before cooking? They're so much easier to peel after cooking.
hahaha.... i have NEVER seen or HEARD of these purple eggs....i live in southern missouri....im only 23 so i havent had too much time in the kitchen....anyways there super cute! could i dye eggs to look like that maybe a deviled egg colored for easter??? sorry if i offend anyone with wanting to just "color" them......thanks!
