Breakfast quiche with your favorite mix-ins

My car was filled with ants after I bought two big hanging baskets filled with petunias for Mother’s Day.

The plants sat in the back of my car for less than 24-hours, but it was enough to realize the purple and pink flowers were carrying the tiny critters. I was not pleased. But, as usual, it was worth it for Mom. It’s been a tradition since I was a kid that we bought my Mom a plant or shrub or tree on Mother’s Day, just warm enough that she could add new items to her flower beds.

One year, she got her lilac bush. Another year, it was some tulips. She even had a willow tree planted in the backyard (twice — the first one got sick).

So in celebrating my mother giving us life, we give her new life to add to her beautiful garden.

And if I still saw my mother, or anyone for that matter, in the morning, I would have made her some delicious breakfast quiche (perfect for your low-carb diet, Mom!). Quiche is great for mixing in whatever you love — crisp broccoli, spinach, bacon or plenty of cheese. And if you make the individual ones, like I have, you can make each one different.
