"Fix it yourself"

Here are some go-to snacks kids can make

Moms like it when their kids eat healthy.
But sometimes it's hard to get fruits and veggies in their tummies.
Amy Wolfe, 33, of Manchester Township said she usually gives her children fruit,
hoping it holds them over until dinnertime.
Wolfe and her kids -- Kaden, 8; Lilla, 6; and Rylan, 3 -- tried these after-school snacks thinking they might be a fun and healthy way to tame their hunger pangs without spoiling their dinner.
In the end, the children were drawn to the less healthy parts of the treats: peanut butter, cheese and pretzel sticks.
Lilla was the only one to eat the celery and the peppers.
But they said they had fun making the treats.
And it kept them seated at the table -- and out of Wolfe's hair -- for a little while.

Help your kids build some culinary muscle this spring by learning to make a few family-friendly favorites at home.

Cooking with fresh ingredients is often more healthful than dining out, especially if the latter means value meals and drive-through windows. When you cook at home, you know exactly what is going into the food. You can adapt recipes to personal tastes, decrease fat and sugar and/or increase the fiber, vegetables or fruits. And, when you’re not rushed to get dinner on the table, cooking with kids can be fun.

Use St. Patrick’s Day as an excuse to get the kids into the kitchen to help with this easy, hands-on recipe for sweet soda bread studded with golden raisins.

The recipe calls for baking the dough as two loaves, but it could be divided into four to accommodate multiple baker’s helpers. And be prepared for a (fun) mess; the dough is sticky.

Lori Broberg of New Freedom loves cooking with chicken because it’s quick, versatile and low in fat.

As chef for Shannon’s Serendipity Catering, Broberg prepares chicken dishes year-round. Winter recipes are usually heavier and use some kind of sauce on the chicken, she said. But with warmer weather around the corner, now is the time to go lighter.

“A lot of spring chicken recipes are marinated and put on the grill or sautéed,” she said. Light fruit sauces can dress up chicken entrees, too.

Slimmed-down stroganoff

When Janette Judd’s sister Denise came for a visit, she brought a special recipe along.

“She made the most awesome beef stroganoff that I can’t get enough of!” Judd wrote. “She continues to bug me about sending it to you to see if you can slim it down for us.”

Just reading the recipe made my mouth water, so I went home to see what I could cook up for them. Most of the excess fat and calories in this stroganoff come from the creamy sauce, and that’s where I focused my efforts.
