Pineapple Cake Martini

By SUSAN HALLER for Smart

Don’t ignore those visions of sugar plums dancing through your head this time of year — embrace them with these sweetly inspired spirits.
With warm flavors like maple, espresso and vanilla, these cocktails will complement your holiday cookies or make a pleasant follow-up to a hearty dinner.

Pineapple Cake Martini
1 maraschino cherry
1½ ounces vanilla-flavored vodka
3 ounces pineapple juice
1 dash grenadine syrup

Place the cherry into a chilled martini glass. Pour in the vodka, then the pineapple juice. Slowly pour in the grenadine. It should sink to the bottom with the cherry. Mix together before drinking.

Hot Buttered Rum Mix
1 cup unsalted butter, softened
1 (16-ounce) package confectioners’ sugar,
sifted
1 pound light brown sugar, packed
1 quart vanilla ice cream, softened

In a large bowl, cream the butter and the sugars together until smooth. Add the softened ice cream and mix until creamy. Transfer to a freezer-safe container with a tight-fitting lid. Place in the freezer for up to one month.
To serve: Place 2 heaping tablespoons of the frozen mix in a highball glass or coffee mug. Add 1 to 2 tablespoons of dark rum. Pour about 6 ounces of boiling water over the mix and stir until melted.

Smart tip

When planning a holiday party where alcohol will be served, make sure all your guests get home safely. Suggest in the invitations that attendees bring a designated driver with them, and make sure you have food and plenty of non-alcoholic beverages on hand. If you have guests who aren’t able to drive home themselves, offer to let them stay the night, or call a cab.
