Recipe: Chocolate Peppermint Cookies

The rich, decadent chocolate combined with the fresh taste of mint is sure to satisfy your sweet tooth and wow your guest. This recipe is best paired with a cup of steaming hot chocolate. Nothing says Christmas like cookies!

Preparation Time: 20 min. Cooking Time: 10-12 min.

Ingredients:

1 cup (two sticks) butter, softened

1 cup brown sugar

2 large eggs

1 teaspoon real vanilla extract

2 cups white flour

1/3 cup unsweetened cocoa powder

1 teaspoon baking powder

1/4 teaspoon salt

3/4 cup sugar

2 drops mint extract

Optional:

Crushed peppermint or candy canes

Chocolate chips

Directions:

Preheat oven to 350 degrees F.

In a large bowl, cream together the butter and both sugars. Beat in eggs, vanilla and mint extract until smooth. In another bowl combine the flour, cocoa powder and baking powder. Gradually add the flour mixture to the butter mixture and stir until blended, careful not to over mix. Fold in crushed peppermint and chocolate chips.

Roll dough into one-inch balls and place onto a pan lined with parchment paper. Put them into the oven and allow them to bake for 10 to 12 minutes. Eat warm with milk or hot chocolate.
