We tend to romanticize “the good old days” when Mom, or Grandma, or Great-grandma, lovingly baked wonderful breads and cakes, all from scratch. If those fine ladies were doing all the baking, why then are there so many ads for local bakeries in the recently reprinted 1916 York Hospital Auxiliary Cookbook? At least 11 bakeries from all over the county took out ads in the cookbook, and I sure that they were only a sampling of the York County bakeries of the time.
These bakeries turned out a variety of products, mostly familiar, but some not. A friend asked what “sugar pretzels” were. There were listed in a Minnich Bakery ad in a previous post. Maybe sweet rolls twisted like a pretzel? Several of the bakeries list pretzels among their wares. I guessing that they might be soft pretzels, because there were commercial pretzel bakers, who probably turned out hard pretzels, operating at the time.
At least two of the bakeries were “steam bakeries.” According to internet search results, that seems to refer to the method used to heat the ovens with tubes containing very hot steam. It sounds similar to steam heat in your home, only hotter.
