Between three to four years ago, my favorite aunt, Aunt Brenda, gave me a George Foreman grill for Christmas.
Until this weekend, the gift had sat on my counter in its box. (Sorry, auntie.)
However, I wanted something grilled this weekend, and didn't feel like dealing with charcoal, lighter fluid (fire! fire! fire! said in Beavis voice) or trying to keep my cat, Mo, from escaping every time I open the patio door.
So, I dusted off the box and freed the Foreman grill. Much to my surprise, it's one of the best gifts ever (other favorite gifts include my heated blanket - Thanks mom and dad - my make-up travel bag - from Ann - and the "In Death" books I got from Amanda.)!
I used the grill to cook a bunch of stuff this weekend, and I wanted to share a good, healthy recipe with you guys.
Jamaician Jerk Turkey Wraps
Ingredients
4 cups of broccoli slaw
1 large tomato, seeded and chopped (about 1 1/2 cups)
1/3 cup coleslaw dressing
2 jalapeno peppers, finely chopped (Use caution - remember my "Hoppin' John" experience)
1 1/2 teaspoons Caribbean jerk seasoning
6 ounces turkey breast tenderloin
Chopped cilantro (optional)
8 8-inch flour torlittla, warmed
Instructions
1. Toss together broccoli slaw, tomato, dressing and peppers. Set aside
2. Preheat George Foreman grill for five minutes.
3. Rub jerk seasonings on both sides of the turkey.
4. Grill turkey seven minutes, or until turkey is no longer pink and juices run clear.
5. Thinly-slice turkey. Warm tortillas in the oven for 1 to 2 minutes.
6. Place sliced turkey on tortillas, spoon on broccoli slaw mixture and top with cilantro.
***If you're not a fan of broccoli slaw, try topping them like tacos, with cheese, lettuce, etc., which is also tasty.***
7. Wrap to enclose, serve immediately.
Yield: 4 servings

I think the grill (charcoal, gas or Foreman) is the best place to prepare vegetables and fruit. It gives them a unique flavor that makes them taste not so much like vegetables. YUM!
