Low-Fat Bisquick oven-fried chicken

For those looking for a low-fat way to have "fried" chicken, Bisquick offers this recipe.

Ingredients

2-3 lbs meaty chicken pieces

2/3 cup Bisquick reduced-fat baking mix

1 1/2 teaspoons paprika

1 teaspoon salt

1/4 teaspoon pepper

1 tablespoon butter

Instructions

1. Place butter in 13x9 pan.

2. Preheat oven to 425 and place pan and butter in oven while it's preheating.

3. Combine Bisquick, Paprika, Salt, and Pepper in a large resealable bag.

4. Skin chicken, if desired. Rinse each piece under cold water.

5. Place in bag, one or two pieces at a time, and shake to coat well.

6. When butter is melted in pan (pan should be hot), place meat in pan, meaty sides down.

7. Bake 35 minutes.

8. Turn pieces over and bake an additional 10-15 minute or until internal temperature reaches 160.

Yield: 4 servings, two pieces each

Need a side dish? Try this chicken with brown rice and a 1/2 cup of veggies or with a leafy salad - two cups of salad greens, two sliced radishes, 6 cherry tomatoes and two tablespoons of light salad dressing - and a 1/2 cup serving of fruit.
