For a long time, Ginger Hollidge dreamed of bringing a little bit of her own flavor to Central Market — a big bacon cheese steak, then jalapeno grilled cheese on Texas toast and her pepper’s porter sauce for her slow-cooked pulled pork sandwiches.
And after two months of working their “tails off, for lack of a better word,” Hollidge and her boyfriend, Stephen Walker, are ready to turn up the heat today at Pepper’s Grille, the market’s newest eatery.
“All fresh, never frozen ingredients” are what’s on the locally-supplied, original-recipe menu for opening day, Hollidge said, and hopefully, a good crowd as well.
Friends have been telling Walker and Hollidge, both veterans of the food industry, for years that they needed to break out on their own. Hollidge said she heard a market eatery might be up for sale about a year ago, but wasn’t in a position at that time to move on it.
But when the opportunity came up again a few months ago, she “got her ducks in a row” and presented an offer.
“I was pretty much determined to find out a way to get this going,” she said.
And now, as she prepares to warm up the inaugural frying pan and dish out the first grilled pepper eggs — a fried egg-white cooked in a pepper ring — she says she’s ready.
Pre-launch jitters are gone and “the adrenaline is pumping.”
